I love it when the weather turns cool and it's kind of rainy or there's a chill in the air, because that means I get to make soup! Soup is one of my favorite foods! One of the soups I make every week, all through the winter, is my sweet and sour cabbage soup. Everyone loves it. When someone does me a favor I always repay them with a quart of cabbage soup. My mom calls me once a week and asks if I've made cabbage soup yet. When my grandkids come over they beg me to make cabbage soup! It's delicious, it's hearty, it's very filling and it's low carb.
Here's how I make it.
First fry at least 8 pieces of bacon til crisp. I do the whole pound. In my opinion there is never too much bacon.
Then remove from the pan and drain the fat into a jar. Then brown 1 1/2 lbs of ground beef. Salt, Pepper and Garlic Powder to taste.
While that's browning, in another pot ( I use a 9 quart Le Creuset Dutch Oven) add about 2 tablespoons of the bacon fat and one diced onion. Red or white, doesn't matter. One stalk of celery diced and 2 cloves of garlic minced through the garlic press.
While that's starting to sautee, cut your cabbage. Cut it in half and remove the core, slice it then turn it and slice again. Now you should have chunks. I also add 2-3 carrots, Salt, Pepper and Garlic Powder. Add that to the pot and stir.
Put on the lid and "sweat" the vegetables until they reduce down to about half their size. Stirring every 5 minutes or so. Cabbage has a lot of water, this helps cook it out so your soup has more flavor.
Now add two quarts of tomatoes ( I use my own tomatoes that I canned earlier this summer, click here to learn how)
Add 1 quart of chicken broth
The ground beef, the crumbled bacon,
One quart of water, and I like to add some cauliflower. It gives you the feeling that you're getting a potato without the carbs.
And this is important! Add 4 Tablespoons of Apple Cider Vinegar. It gives the soup that delicious sweet and sour taste!
Stir. Put on lid.
Put in oven at 300 degrees and let cook for about 2-3 hours. Stir occasionally.
Here you go!
Now go have yourself a nice bowl of cabbage soup! Be prepared, you're gonna want seconds!
P.S. To make it extra delicious you can sprinkle a little fresh grated parmesan cheese!

Meanwhile, in another large pot, melt 2 tablespoons bacon fat and sautee 1 chopped onion, 2 cloves garlic (minced), 1 head cabbage chopped in small pieces, stalk of celery diced and 2 carrots chopped. Stir and Sweat the vegetables for about 15 mins. Then add 2 jars- 32 oz stewed tomatoes (or close to that, I use my canned tomatoes) add 4 cups water and 4 cups chicken broth, add meat, crumbled up bacon and cauliflower pieces. Add 4 Tablespoons Apple Cider Vinegar. Stir. Put in oven at 300 for about 2-3 hours. Stir occasionally.
